Directions
Preheat oven to 180°C.
Put the tea, honey, sugar and eggs into a bowl, and mix well.
Add the soda-vinegar mixture and then the flours, and stir to combine (the mixture should have the consistency of thick cream).
Grease a casserole dish or 25-cm cake tin.
Pour in the cake mixture and bake for 1 hour (to test if the cake is cooked, insert a wooden skewer: if it comes out clean, the cake is ready).
Turn out the cake onto a wire rack, and sprinkle with sugar and cinnamon while still warm.
